Homemade chicken Kiev's chips and salad for dinner.

Had a really good chicken curry tonight with lime pickle of course, veg stir fry tomorrow.

Good shout on the Chicken Kiev. Properly done they are fantastic. Recently realised that you take off the small fillet from the breast, lightly flatten it, and then use as the cork to seal the slit on the inside before you breadcrumb. All that lovely garlic butter then stays sealed on the inside until you cut it open.

How long do fry liver for mate?
I LOVE liver and onions but I'm always worried about under cooking it.

Depends on the liver G62. Probably best to use lambs liver for liver and onions/ bacon. You can cook that for an hour or more, so plenty of time to get the sauce nice and dark. Calves liver is better liver, but for quick cooking only, it will turn to mush if you slow cook ( and is better pink) . Leave pigs liver in the shop, unless you fancy knocking up some faggots.
